PB & Banana Chocolate Chip Mini Muffins

Peanut butter, bananas and chocolate chips are the 3 things I always need to have in stock at home. My family has a sweet tooth and I try to bake healthy desserts to keep them happy and healthy! Not only are these a hit at home but when we have visitors they rave about them and they always ask me for the recipe before they leave. They can be made for breakfast, dessert, pre work out snack or after school snack. I pretty much have to bake these everyday to keep inventory for the family  LOL. They are easy to prepare, a quick bake and make a minimal kitchen mess. I forgot to mention they are flourless and only 66 calories!

INGREDIENTS:

1 medium banana
1 large egg
1/2 cup creamy peanut butter (I like to use honey PB)
3 tablespoons honey (I only had 1 1/2 if I use honey PB)
1 tablespoon vanilla extract
1/4 teaspoon baking soda
pinch salt (optional)
semi-sweet chocolate chips to your liking

DIRECTIONS:

  1. Preheat oven to 400F and spray muffin pan with cooking spray
  2. Put first 7 ingredients in a bowl and blend on high speed until smooth ( about 1 minute)
  3. Add chocolate chips and stir in by hand
  4. Using a tablespoon put the mix into the mini muffin pan
  5. Bake for 8 to 9 minutes
  6. Let cool in pans for about 10 minutes
  7. Enjoy!
