I love to cook breakfast! I’ve become a master of it. My family loves my Chocolate Chip Banana Pancakes. When I was a working mom I was only able to cook a good fulfilling breakfast on the weekend but now that I am a SAHM I get to cook for my family every morning. Since I’ve had my daughter in January I have been on a mission to eat healthier and I am taking my family along with me on the journey. I had to find an alternative to my famous pancakes so I scoured Pinterest for some protein pancakes and added a bit of a twist. The additional positives to these protein pancakes is they are quick to make, less of a mess, it is easier to scale the recipe for your servings, and my toddler doesn’t eat meat so this is a great way for him to get good protein.
INGREDIENTS:
1 egg
1 banana
1/2 scoop of protein powder
chocolate chips to your liking
4 servings
- Start by mashing banana in a bowl with a fork. Once mashed, add in egg and mix, add in vanilla protein powder and stir until mixed well. Then add the chocolate chips and mix in the batter.
- Heat griddle or frying pan over low-medium heat. Once warm, spray with cooking spray and pour 1/4 cup of batter on pan. After about 4 minutes, or when bottom of pancake is firm or lightly browned, flip over and cook for another 1-2 minutes. (Batter will not bubble like a typical pancake, so watch closely!)
